Pad Thai = stir-fried rice noodles, was promoted for enhancing rice export in Thailand during the Prime Minister Plaek Phibunsongkhram to western countries. It consists of rice noodles, tofu, eggs, tamarind sauce or paste, peanuts, fish sauce, bean sprouts and spring onion. If you like to add more vegetable, you can add paprika. (not traditional style,but more colorful)
Please be noted that:
*Rice noodles : It is usually middle thickness of rice noodles
* Fish sauce : It is very important to use high quality of Thai fish sauce for the best result.
*Tamarind paste: It can be homemade tamarind sauce by using ripe tamarind with water.
There are some additional spices such as sugar, dried chili, ground peanuts and a piece of lime to add other tastes (sweet, spicy, crunchy, sour) when it is served. It is usually cooked in neutral taste, but it is not necessary to mix all of these spices to your pad thai noodles. It depends on what tastes you wish to have more in your plate. However, it generally should have 5 sensations (salty, sweet, crunchy, sour, spicy)
Pad Thai noodles usually have 3 variations:
1. Pad Thai Kung = noodles with fresh shrimps
2. Pad Thai Kai = noodles with chicken
3. Pad Thai = noodles with dried shrimps (common Pad Thai) or without dried shrimps (vegetarian noodles)
