Yellow curry

Curry is originated from India in the combination of herbs and spices. The spice mixture is cooked with other ingredients such as coconut milk, cream, yoguart, roux (flour & oil). It depends on local and personal preferences in other countries.

Thai yellow curry is a well known mild creamy soup, neighbouring countries and around the world. There are two kinds of yellow curry; Kaeng- Kari and Kaeng-Lueang.

Yellow curry paste is made of all fresh herbal ingredients such as cinnamon, coriander seed, cumin, curcuma, lemongrass, mustard, red chili,garlic, salt, shallot.

The most popular dish is called Kaeng -Kari Kai = Chicken Curry, cooking with coconut milk. The color of this curry is yellowish-brown with red chili oil. That is why it looks red or orange.

Another version of Thai yellow curry, "Kaeng- Lueang" = yellow curry from southern Thailand which is very spicy and quite sour. The color is usually yellow.

There are other names of yellow curry when it is added with other ingredients such as beef, pork, shrimps or seafood (Mixed of squids, crabs, clams and shrimps). For example, Kaeng - Kari - Kung  = Shrimps curry.

A variety of vegetables for yellow curry such as potatos, carrots, tomatos and ananas.

Indian and Muslim curry : Chicken curry with peanuts or cashew nuts , onions, tomatos, potatos and carrots.

The yellow curry paste can create other simple delicious or exclusive menus or snacks. For example : Crunchy Chicken Satay with Jasmine or Perfume Rice.

Satay Parfait:

Shrimp curry or Chinese seafood: Chinese roux (flour& oil fry in pan and add curry mix powder)


In Southern Thailand, there is a common dish called "Kao Mok Kai" =  Spicy Chicken Rice Curry. The spice mixture is like Muslim curry:

Ingredients:
Dextrose
Salt
Hydrolyzed corn protein
Red chili
Fenugreek
Cumin
Cardamom
Turmeric
Dried clove
Bay leaves
Mustard
Saffron
Silicon dioxide

After cooking with this spices, you should get this yellow rice as the below image:
 


For vegetarians, This menu has no meat crying  ( please add at least smoked tofu or vegetable balls).

If you like " Massaman Curry", just add potatos, onions, peanuts, palm sugar, cinnamon, clove, star anise in the yellow curry. It is a Muslim dish, commonly add chicken, but you can add other meats (beef, goat, pork, if you are not Muslim).

It was written in a Thai poem that women bewitched men by cooking this Massaman curry, so to speak, she cast a spell on men like the witch. It means no man can resist this Massaman curry, once he has tried it. It was actually written, " Beloved Massaman, fragrant cumin and hot spices, any man who has swollowed this, is bound to have a desire for her. Indeed, a witch food!!!
